Almond Flour Biscotti & No Sugar Peanut Butter Balls

My quest for finding and making healthier Christmas cookies continues. These almond flour biscotti are my new obsession. While researching different recipes that were white flour free, I came across this one on www.powerhungry.com. I made a few tweaks to make it my own and I think you will enjoy.
Traditional peanut butter balls call for 4 cups of powdered sugar but I found one that contains no, yep, no sugar. Often times when I search and try recipes, the gorgeous photos online and my end product are quite different. However, this peanut butter ball recipe does not disappoint. My family, in particular my picky-eater son, did not notice a difference and they satisfy your sweet craving with just one.
Almond Flour Biscotti
1 3/4 cup of almond flour
1/4 cup of coconut or brown sugar
2 tablespoons arrowroot
1 teaspoon baking powder
1 teaspoon of almond extract
3 tablespoons of water
1/2 cup of low sugar dried cranberries
1 cup of dark or semi-sweet chocolate chips
Heat oven to 350. In a large bowl combine the flour, sugar, arrowroot, baking powder, and almond extract. Add water. Once dough starts to form add cranberries. Place dough on a parchment lined baking sheet and shape into to a 11 x 3 in log. Bake for approximately 20-23 minutes.
Refrigerate for 1 hour and then slice log into 1/2 in slices. Bake slices at 250 for 20 minutes, flip and bake for another 20 minutes. Shut oven off and allow biscotti to remain in oven for 1-2 hour or until dry.
